Maito is Panama's most acclaimed restaurant, led by chef Mario Castrellón. Located in the Bella Vista neighborhood, it has been named the best restaurant in Central America and the Caribbean by Latin America's 50 Best Restaurants. The concept celebrates Panama's biodiversity with ingredients from local small producers: yuca, yam, pixbae palm fruit, tropical fruits, and Pacific and Caribbean seafood. Each dish is a modern interpretation of Panamanian cuisine using avant-garde techniques.
